I'm fast.  On a busy bar i use a system for serving 5 people at once:

Customer 1. Finishing off drinks
Customer 2. "There's your change"
Customer 3. "That'll be £12.50 please."
Customer 4. Making drinks.
Customer 5. "What are you having?"
Customer 6. "With you next."

Everyone moves up one place as i finish each round. I can do this without 
losing quality of drinks but head hurts if i do it for too long. :)

Other than that i think general awareness of what's going on around me.  I can 
see when the ice is low, when the table in the corner is a mess, when there's 
a potential fight by the door, when i haven't seen a glass collector for 10 
minutes and when the guy at the end of the bar has only a mouthful of beer 
left in his glass.

And delegating, if i can see 4 jobs that need doing and 3 people not doing 
anything i can soon fix that.
