Actually, most decent, experienced bartenders really DO know the bulk of the 
most common drink recipes. Any bartender working for a chain type 
restaurant/bar would need to know around 20-30 house speciality cocktails 
alone, another 10 non-alcoholic drink recipes, and be expected to know about 
50-100 of the most common standard cocktails.

I could see people getting pretty annoyed while waiting in line while you had 
to have the step you through each and every ingredient, if they even knew - 
many people don't have a clue what's in the drinks they order....

As for getting a job before you have experience, there's a few ways:

1) Work your way up - start serving/cocktailing first
2) Bartending School
3) Apply at the dive bars, bowling alleys, country clubs - they're more likely 
to hire someone without experience
