Just an illustration that alcohol alone does not define specific gravity in 
practice. Water is just the baseline reference - Gravity 1.0. And with zero 
alcohol it sits above most of the liqueurs. Hence the 'proof' theory is 
disproved. ;-)
 
That said, my trick for making things layer against nature is to add vodka, 
which certainly raises the alc, but more importantly dilutes the sugar. 
(Natrone can probably expand on this)

I've layered Juice (as a layer in a shot) before now. IIRC Pineapple was 
pretty heavy, Cranberry was pretty light.

Another very effective way of getting layers to work is to chill the stuff you 
want on the bottom.
