   Elliot,

   Cleaning is usually all it takes. One bar I know that was having problems, 
found a pile of lime wedges behind a diswasher. Another was caused by dried 
beer on a mounted opener. Well it wasn't really dried just really thick and 
gummy. It ran all the way to the floor where it has started to pile up.
   Until you find the source, you can always leave out a monkey dish with some 
vermouth in it. For some reason Vermouth bottles show fruit flies first.
   Use trash can liners, and pick up all garnishes after your shift.
