I was watching that traveling chef show the other night, and it was one about
bars, and one of the guy's favorites was a little dive that had an actual
system of giving away free drinks. I believe it was for every 2 or 3 beers you
received one free. You could probably raise the price of the beer by 30% and
make out great on a deal like this, and the guests feel like they're "getting
hooked up". However, without a real, documented system in place, it simply
falls apart. I'm one that believes that regular guests do need to be taken
care of, but the truth is, there are those that will keep taking and wanting
until you end up losing money on them. Sometimes trying to take care of a
regular can end up creating a monster. That's why a good system really works
well.
