Well, first off - places like TGI Friday's, Chili's, Applebee's, etc, can be
much more challenging for a rookie bartender than the corner bar. Not only do
they do much higher volume overall, but the bartender generally has a load of
responsibilities on top of just making drinks - and the drinks you do end up
making, are typically much more involved. You would have probably done
yourself a favor by starting out as a server and already have been bartending
by now, and even if you hadn't worked your way up yet, you'd still have the
restaurant experience to put on your resume. My 2 cents? You're probably
sticking your nose up at the vast majority of places that you have the
possibility of landing a job. You won't start out as a bartender in any chain
restaurant, unless it's a new opening.
