Ummm...in my experience, Bailey's will start to curdle with almost anything 
citrus or fruit related. I even tried cherry juice from a jar of maraschino 
cherries and it curdled!

My favorite way to mix Bailey's is with Amaretto. You might also try liquers 
like Kahlua, Tia Maria, Frangelico or Butterscotch schnapps.
