Subject: Long Island Turkey

This is one of those recipes I saw and printed but have not yet tried. This 
particular recipe came from a real nice guy named Will who shared it on 
another forum. It sounds great, and just in time for Thanksgiving. Enjoy.
Long Island Turkey
1 20 pound turkey cleaned (giblets removed) and thawed
10 small apples cored and seeded cut into wedges
1 onion peeled and cut into wedges
2 stalks of celery chopped
3 Tbs of frozen orange juice
Butter of Vegetable oil
1/2 cup of Long Island Tea (or 1/2 cup Brandy) 
1 cup of mayonaise
Seasond salt and pepper
Mesquite chips
Charcoal
Make sure your oven and grill will hold a 20 pound turkey!
Preheat oven to 325F
Fasten the neck end of the turkey closed with kitchen twine or skewers. Rub 
the inside of the turkey with the frozen OJ. Stuff with the apples, onion and 
celery. Put Turkey into roasting pan breast side down. Pour the Long Island 
Tea into the open end and sew it shut with everything inside. Rub with butter, 
seasoned salt and pepper. Cover and bake for 2 hours at 325F. After 1 hour 45 
minutes lite 3 handfulls of charcoal on one side of the grill. After the 
turkey has baked for two hours take it out and remove it from the pan 
carefully. Coat it with the mayonaise ans place it on the opposite side of the 
grill from the charcoal. Place a hand full on Mesquite chips on the coals and 
shut the lid. Open all the vent holes very slightly. Smoke the turkey for 1 
1/2 hours on a low fire. Put more chips in every 30 minutes, add a little more 
charcoal if necessary. Baste with any remaining mayonaise if necessary.
If you use Hickory chips then less chips are required.
