I knew I had the recipe's somewhere, just found them.....
Wallybe Darned #1
1oz vodka
1oz peach schnapps
1oz sweet and sour
1/2 champagne
server over rocks or frozen
OR (another variation)
Wallybe Darned #2
1 oz vodka
1 oz peach schnapps
2 oz sweet and sour (concentrate mix)
3 oz peach puree
fill with champagne
blend with ice
You may need to adjust the ingredients a little to your own liking, I haven't 
had a real Wallybe Darned from Outback but was told by the guy who passed 
these recipes on to me that they are very similar to the real thing. Enjoy
