I would say most definatly go with a premium well. It will definatly make your 
establishment stick out. 

Here are the brands I'd personally prefer in a premium well...

Vodka: Stoli (You can probably get a great deal on Smirnoff though, they want 
to be in every bars well now...)
Gin: Beefeater 
Rum: Captain Morgan spiced (it's 70 proof instead of 80)
Rum alt: Bacardi Light (just incase you have to have a clear rum)
Tequilla: Sauza silver or Sauza gold (the 1 liter bottles are nice and skinny)
Bourbon: Jeam Bim
Scotch: Cutty Sark, Dewars, or Johnny Red 
Brandy: Christian Brothers or maybe E&J
Seagrams 7 is standard no matter what
and Kahlua
As far as triple sec, I've always been a fan of Hirim Walker's
