The fact that the owner passed over better qualified applicants scares me, but 
even more, he TOLD you about them.  Methinks something nefarious that way 
comes.
Does this joint have a "bar"?  (y'know, something with more than 4 stools)  If 
not, then you really won't be making much more than glasses of wine, and you 
won't have to school up on that.  
If you do have a bar, than I'd get to cracking the books.  While the boss has 
told you that most of the volume is wine, that tells me that his clientele is 
the type that will have Old Fashioneds, Negronis, Martinis and other such 
things.  While they may seldom come up, you'd better know them or risk getting 
thrown under the bus.

I dunno...I just can't shake the feeling that Li'l Red Riding Hood is about to 
take a shortcut through the Big Bad Woods........
