I just did this about a month ago.  Man was it PEEE-NUTTY!  The problem is 
that you'll likely get some of the oil in your booze, which while not really 
bad, imparts a weird texture.  Here's what I did:

1 pint coarsely chopped peanuts
1 liter brandy
1 tsp vanilla
1 cinnamon stick.

Toast the nuts in a skillet, then transfer to a receptacle.  Pour the brandy 
in while the nuts are still hot.  Add remaining ingredients.  Shake twice a 
day for 10 days.  Strain through coffee filters.  Add simple syrup to taste.

I think roasting the nuts is where I went awry.  Or adding the brandy while 
the nuts were still warm.
