Let me say that, as a bartender, I would be very unhappy splitting my tips 
with the servers.  When I worked for our soccer stadium, our boss tried doing 
the same thing.  It didn't work out, it's not the same job.  Servers work very 
hard, as well as bartenders.  So, please don't misunderstand my point, however 
they are seperate jobs.  If I am bartending with another bartender, of course 
we split tips, but I will never split with my servers.  Just like I would 
never expect them to split with me.  If they make a $20 tip for excellent 
service, how is it fair for me to take a portion of that?  They went out of 
their way to provide good service, that's why it's a tip. Sometimes we work 
harder than they do, sometimes they work harder than us.  It just depends, but 
when I did banquet bartend, we worked the whole time.  Setting, up breaking 
down, and serving customers constantly.  Our servers had a lot of time where 
they didn't have to do anything.  They would sit in the back and talk and eat. 
 Now, why would I share my tips when I was working for them the whole time.  I 
wouldn't want to work for any hotel that did that.  I can understand each 
person getting a percentage of the food/liquor cost, but not splitting actual 
tips eared from bartending, or serving. They are 2 different jobs.
