As a full service bartender and now a manager I rarely hire any one from a 
bartending school.  The confidence you speak of usually comes across as 
cockiness.  A "bartender" straight out of school should act very humble, 
grasshopper.  Being a bartender is a top dog postition and must be earned.  
Not by drink knowledge but experiance.  Drinks, speed, and knowledge of liquor 
laws plus experiance of dealing with people who have been drinking.  Also pour 
cost and profits are important.  I can not say enough about being honest and 
sober behind the bar.  Take any job you can at a bar, resturant or club and 
work your ass off.  Bartender school graduates get crummy bar jobs,  ie: day 
shift at a hotel.
