Everything changes once the bottle's been opened and exposed to air, 
especially on anything that's low/non-alcoholic. Something that could have a 2 
year shelf life unopened, could theoretically only last two days once it's 
been opened. 

As for bitters, I think that would follow the typical shelf life of a liquor 
(nearly indefinite) as it has a rather high alcohol content.
