Here's my 2 cents:

I've read it has a shelf life of about a month, however in practice, I've seen 
it last far longer than this with no ill effect (three months)

> -Roses Lime Juice (can't find a date on it)?

I've always gone 90 days on these, though I've worked for a large chain that 
gave them 30 days afer opening, which I think it a bit short

> -Coconut milk

If you're referring to Coco Lopez, one week, however keep refridgerated after 
opening.

* All of these are based on opened containers
