I'm not sure in the time to infuse, a couple of weeks maybe?  Cheryl or Beans 
may be able to help you here.  As far as using the Vodka, I would remove all 
of it into santitized bottles, and cap them tightly, possibly refridgerating 
the mess, at least keeping it away from the sun to avoid sunlight 
discoloration.  Use the soaked pinapple as garnish, or perhaps in some 
wonderfull pinappley blended drink.  My supposition is that like almost all 
other fruit, oxidization in a pinapple can ocour rapidly and is not a pretty 
thing.
