That's a great attitude.  You're right, bartending school doesn't actually 
make you a bartender yet.  You're going to get the best of both worlds as 
you'll probably know more drinks than folks that just went straight in as bar 
backs without the school.  I don't think the school is critical, but for 
people who never go and only learn on the job they'll only learn the drinks 
that are popular at that one place.  You'll also (hopefully) get a chance to 
see some of the best bartenders in action and eventually take your place among 
them.  You'll almost surely be making more money than your fellow graudates as 
well - being a bar back in a club or other happening place will yield you more 
cash than being a bartender in a low volume restaurant or sort of bar that 
will hire raw graduates.
