Perhaps where you live they have regulations regarding the quantity of liquor
that can go into a drink, however most places do not. I know Utah is pretty
strict as are other states, but all over the west coast, you are not limited
to two ounces, unless it's simply the house policy.
However, I've worked in places that have a roughly two ounce martini recipe,
and place that into much larger capacity martini glass. For one, you're going
to experience a certain amount of ice melt, so a two ounce martini turns to
three quickly, and two, you shouldn't fill a martini glass to the rim anyways.
In the case of absurdly large martini glasses, well, you just don't fill those
suckers up.
