Rookie,
George is kind of a crackpot - as you may be able to tell by his second post, 
however he does come up with some real advice of his own once in a while.  

I'm a bar manager (managing 4 bars) on the Western Slope of CO. I have 
attached some links of discussions that I have had before with others.  Some 
of the info may not pertain too much, but other info may be valuable.

Bartending School:  As you are 28 I can prpbably safely assume that you have 
done your fair share of sitting at a bar.  Before you go to school, take some 
time when you are sitting at the bar and pay attention to what the tenders and 
other staff are doing.  This will help you see what you are going to be 
responsible for doing.  Schools are OK I guess, but I dont make a habit of 
hiring graduates - the reasoning is outlined in the second link (I hate to get 
too redudndant here).  It will really depend on the kind of person you are as 
to wether school would be benificial.  One bit of advice is to stay away from 
the Internet scams that send you a book and a diploma - What use is that?  I 
prefer to teach my tenders from scratch, nuff said there.

As far as finding a jobie job,  afternoon is a good time to go in.  Your 
approach will have to be diffrent for every place as each place is diffrent.  
Do make sure your appearance is presentable and clean.  Speak politely.  One 
bit of advice - for D-town especialy - is that a lot of college students work 
in these bars, and you know that students go home to see their families and 
graduate and move on, so your job search may depend on timing (like finding a 
good place to live).  Start checking in right before graduation and after 
graduation.  Also, are you really set on stying in Denver?  A bunch of resorts 
start looking for help before the ski season starts, and this may be an 
excellent "in" for you.  I wish I could help you out, but I'm overstaffed as 
it is right now (how on earth did I end up with 50 employees?).
