I second that, brother!
My own preference is Maker's Mark, I think an Old-fashioned is the perfect way
to showcase a high quality bourbon. Of course it could be made with any
whiskey that one likes but I've always been asked to make one with bourbon.
And I've never made one from the well. If someone wants a screwdriver I'm not
going to suggest Grey Goose - but if they want a Manhattan or Old-fashioned I
am going to suggest a good bourbon, MM being my standard.
Case in point, I had a female customer ask for a Maker's Mark and coke.
Without being condescending I told her that this was a waste of good bourbon,
would she like to try an Old-fashioned? I warned her that it would be a
stronger drink but she said she was game and turned out enjoying it very much.
So I don't try to upsell when it's a waste of money, but I also don't let my
customers go low end when the drink really needs a better product to be
enjoyed.
I'm still amazed when someone asks for a Vodka Martini with the well - the
stuff tastes like rubbing alcohol.
