You will never find a gravity chart that replicates the contents of your bar. 
Unless of course you buy all the spirits on a particular gravity chart.

Use the following as a general rule: syrup, liqueur, spirit, overproof spirit.

Then use a little trail and error.

And a piece of paper, to take notes.

When a liquid you are trying to layer on top of another sinks, take a note of 
where it settles. Take a note of it. So next time you just place it on the 
layer it settles, then carry on trying to layer some more liquids.

I once created a 13 layered shot. basically it was sugar with booze layered on 
top.

Also take into account the colours you use.
