It seems a little weird to specify instant coffee if they don't mean the 
powder.  Otherwise, why not just say 2 oz. coffee and let the drinker decide 
what kind?  I can see a recipe needing something coffee-flavored and easily 
dissolvable that doesn't come with extra liquid, but I can't see it 
specifically needing bad liquid coffee rather than good.

My favorite recipe using instant coffee from some blender cookbook I read long 
ago:

Mocha frappé:

1 container vanilla yogurt
1 tbsp. chocolate milk mix (Nestlé Quik, etc.)
1 tsp. instant coffee
2 ice cubes

Blend until smooth.

Nice for breakfast, and not horribly sweet.
