I have a funny story along these lines. I walked into the current place where
I work when there was dirt on the ground. I befriended the owners and told
them I had big plans for the bar. Mind you this is at a Medeteranean themed
restaurant. At this time the had panned to have a bar that had more wine then
liquor. I met my other head bartender, whom has over 10yrs experience, that
had just moved into town. Both of us had planned on turning this place into a
high volume bar. I think the owners almost had a heartattck when they saw the
first order, but they were cool and worked with it. This was the classic case
of the bartenders/ bar manager knowing more about the business. They let us
do our thing, which is the best part of having great owners, and now we are
two of the highest paid tenders in town on nights that other people said could
never work. We handle more volume of a bar that originally had 1 well and 1
gun then most clubs do, not to brag or nothing ;) We are even surprised it
came this far, but we put a lot of sweat and blood (literally) into it.
Anyways, that strayed a little, but my main point was that at the time I think
the owners fealt a little intimidated by us. I have to give it to them for
putting up with us and listening to are crazy plans.
