a couple of my big things when hiring are:
pour accuracy, spoken about in your other thread
General knowlege (what is rum made from? What is the diffrence in burbons and
whiskeys? what is the process of distilling vodka? THese are wonderfull
things to know to enlighten clientelle that is the least bit curious, like a
docent at a museum, you must know all of the product!) and mixology, haqve you
commited a singapore sling to memory, or do you have to look it up every time.
Corect money handling and counting of change is a HUGE issue for me, I will
not have a tender just throw change back at a coustomer, it must be counted
back to them, saves a lot of problems in the long run.
General appearance, clean nails and hands, clean clothes, well groomed hair.
Personality, this is a biggie. If you have a crapy personality or one that
doesn't mesh with the rest of the staff and clients, then you won't be around
for long. I have a bartender thay says "You can teach a monkey to bartend!"
to that my answer is always "Yes, but it takes a hell of a lot of training to
teach him not to throw his poo at the coustomers!"
