Flat tipping never makes sense - except for a flat minimum.
What is the barbacks motive to bust his ass if he knows the most it will get
him is the same he made on his slowest night (except for the whole "you're
fired thing).
Most bars I have worked and managed required you to tip a minimum of 10% of
your tips. Some that gave barbacks alot of required duties set the minimum at
20%. I personally feel 10% is a good starting point and that gives room for a
tender to show their appreciation in the form of a higher tip percentage. I
find this is great for morale.
WOW! $600+ in a night. We don't see that around here. The most I know of on a
regular basis is about $375 a shift.
Of course, around here if your a barback and getting $60 a night plus your
minimum hourly wage you're doing pretty well.
