I agree with Natrone, The joy of mixology is a fantastic book, which Gary 
expands on in his cocktails in the country course.

As far as applying, apply where you hang out, where you know and like the 
clientele, where they make the type of drinks you would like to serve (beer 
and shot place, 5 star restaurant w/ classic cocktails, cozy lounge with 
trendy drinks, If ya like live music and dancing, try a club.) you get the 
idea.
