Jess, 
 I just completed Gary Regan's "cocktails in the country" course. We made his 
version of a mint julep with not a lick of mint muddled in the drink. He puts 
a "garden of mint" as a garnish and when you sip it, you inhale and the 
flavors mix in the back of your throat. It was , by far, the BEST julep I ever 
had!
the added bonus is you can make it faster. Use simple syrup in place of the 
sugar and stir/chill the bourbon till the julep tin is frosty.put enough fresh 
mint to cover top of glass and tall straw.
