You always know when you have customers that are "new" to wine drinking
because they want to sniff the cork when it's presented to them! I never
correct them, but politely ask if the quality of the cork is suitable, blah,
blah, blah. Then, I encourage them to swirl and smell. I explain that they
may be new to wine, but their nose will never let them down! If you like the
bouquet, or the way it smells, chances are you will like the way it tastes.
I'm a big fan of red wines and am trying desperately to educate my staff and
my clientele on the enjoyable experience it has to offer! Most of my staff
are loyal beer or liquor drinkers and it's hard to explain how wine can change
in your mouth.....expanding or contracting.....taking on subtle flavor changes
with foods, etc.......
