  I don't hold firm to the old school of red wine with beef and white wine 
with fish.  I think you should drink what you LIKE.  I've enjoyed many a glass 
of nice Merlot with my salmon.  That being said, I think the same holds true 
with any other drink.  The first thing I will ask a customer is what do they 
LIKE.  I would not want to suggest a martini if they hate vodka or gin.  Find 
out what they like and then suggest from there.  A before dinner cocktail 
suggestion could be just about anything, with the exception of possibly a 
cognac or brandy, or apertif which are traditionally served after dinner.  If 
you're suggesting something to drink while eating, I always push the wine.  
Wine can actually set off a meal.....enhance the flavor of food, where 
cocktails do not (in my opinion).
  And I always drink beer with my oysters..........sorry I couldn't be more 
helpful!
