On-line bartening courses are the biggest scam I think I have ever heard of.
Someone should sue those guys for false advertising.
I wouldn't recommend telling them in the interview that you went to a
online-bartending school. Invent a few places where you worked in the past.
Nothing high volume or high profile, but something that shows some experience
(50% of employers don't check references). In my opinion, knowing drinks is
only 10% of bartending. Don't be picky if they offer you a job. Take it!
What you're looking for is experience, not money. Money will come down the
road.
Side note: I trained a new bartender last month that lied her way into the
job. She new the basic drink recipes, but didn't know what the bottles looked
like, what liquors were what, handling cash, how to change a keg or open a
bottle of wine (the things they don't teach you in bartending school, but
things you need to know). We stuck her on day-shifts.
