          Hi, Susie,
     Mr. Ed has the recipe correct and you must be sure that the half and 
half is cold and fresh. You will find that the higher the butter fat content 
of the dairy product that you use, the more prone to curdling, if old or warm.
If your using manufacturing cream with 40utter fat it will curdle quick. If 
your using half and half, go to milk.
