flaming coffee aka cafe diabolo aka cafe brunol (sp?)  

more or less: coffee, brandy/cognac, orange peel, spices in a chafing dish, 
take a ladel full, light the ladel and pour a streamign column of blue fire 
back into the dish.  nice presentation visual, but all the flaming is done 
under the chef's control, so you don't have a slightly tipsy or clumsy friend 
sloshing flaming 151 onto himself or something flamable like a curtain or a 
woman's dress.

there are a number of flamed drinks that are pretty safe, but the everclear on 
top is a cheap trick to make almost any drink flame (pure alcy lights at much 
cooler temps than diluted, and as the dilution increases, the harder it is to 
light)  there's no "safe" bet when dealing with fire there's just reduction of 
probable danger.  

for something simple and classy there's always a flaming brandy snifter stuck 
to the palm of your hand for a moment.
