As George mentioned, simple syrup is the secret here.
Original recipes for the OldFashioned used granulated sugar (never use
powdered sugar in cocktails), but they also included a splash of water along
with the bitters at the very beginning which would be muddled together to make
a quick simple syrup in the glass. (note: this "splash" of water would be
equal in volume to the amount of sugar used.) However, the modern bartender
has mistakenly translated this "splash" of water not to be used to dissolve
the dugar, but instead to be used to "top off" the drink at the end... And
with soda water at that!
I have learned that here in the US you have a better chance of winning the
lottery then to find a bartender who knows the right way to make an OldFashioned.
So... Here is the recipe for the ultimate OldFashioned:
Using an Old Fasioned glass
1 tsp simple syrup
2 to 3 dashes Angostura bitters
stir
-fill with ice-
2 ounces bourbon (or American rye)
-stir WELL-
Garnish with orange wheel and cherry.
Optional: you can lightly muddle a half orange wheel with the bitters an
sugar (but never a cherry)
