the principle is great,but with the nature of cocktail lists in london you need to be able to learn a multitude of recipes,and THEN be able to replicate them in the appropriate bar! a number of people freelance,and they are very respected and renowned bar tenders,and to work alongside them would be an honour for me.BUT i ply my trade in a world renowned bar,and with the exception of the people i imply above(although not by name!!!!!) the thought of having a 'mixologist for hire' working alongside me on a busy friday night is not pleasant.It is hard enough to carry myself through the night,let alone a 'shaker for hire'.
