Lary,

I'm glad you found a job at last, now stick that one out while you 'network' 
start frequenting the bars and clubs you'd like to work at, meet the tenders, 
get to know the atmosphere.  Don't be too aggressive though, no one likes a 
pushy guy.  Youre right about positions opening up and being proptly filled.  
The job market is tough out there.  A lot of positions get filled by work of 
mouth at the two bars I manage.  To tell the truth, I like to do this kind of 
hiring because someone already under my employ has stuck out their neck for 
somone, vouching for their skills and work ethic.  This means a lot to me, 
that and I check resumes and reffrences, so a "padded" resume holds no weight 
with me, and I'm less likely to hire some one with a padded resume because 
they started off lying to me before I've even put them on payroll.
Start making connections and friends... and keep your day job!
