I started a topic a while ago called 'shake shake shake!!' and in that a few 
people started to discuss bruising alcohol, SwizzleStick gave the most 
detailed and to the point outline of it, I'll copy and paste for ya.

"Bruising is actually caused by shaking a martini. That is why most accounts 
call for stirring a martini unless the customer specifically requests shaking. 


If a customer comments that their martini is "bruised," what they are saying 
is that they have noticed at least one of the following...
1. The drink is cloudy 
2. There are tiny slivers of ice floating in the drink
3. The drink (when served up) is watered down

All of which is a result of shaking or "bruising" the drink.

However, I know many martini experts that say a good martini should be shaken 
to give just a hint of water, so as to remove the edge."
