Dear Double J,
go to www.behind-bars.uk.com and check out Nic St Jean... the most talented 
(and some say temperamental) 'performance flair' bartender in Europe (if not 
the world).
Also check out liquid-assets.co.uk for some Scottish Flair...
and have you checked out Sam de Bolle and his book?
