"Bourbon" can be made anywhere in the US. "Kentucky Bourbon" can only be made
in Kentucky. In order to be called "Bourbon" it has to be distilled from a
mash of at least 51 percent corn (but not more then 79 percent). It also needs
to be barrel aged for at least 2 years.
The mash can either be "Sour" or "Sweet". A Sweet mash is one in which the
fermentation was initiated anew using fresh yeast. A Sour Mash is one in which
some previously processed mash is used to start out the process... like a
"Sourdough" starter.
