Think of the traditional "boston shaker". The "hawthorn" strainer (the metal
strainer with the spring around it) is designed for straining from the "metal"
part of the shaker. The "julep" strainer (a concave metal strainer, without
the spring) is used for straining from the glass.
So you would use a boston shaker for drinks that are "shaken" (sidecar,
margarita, daiquiri...) and a hawhotrn strainer for drinks that are "stirred"
(manhattan, martini, negroni...)
Another way to think of it...
The hawthorn strainer is designed to specifically fit a particular size of
container, most noteably the metal shell part of a boston shaker. It doesn't
work well for any other size of container. It is a "tight fit" on the glass
part of a boston shaker, often "popping out" due to the springs. On larger
containers, it is just akward.
The julep strainer perfectly fits a slightly smaller container, but also due
to its design it can be used in almost any size of container, even ones that
are larger then what a hawthorn could be used for.
