Subject: Looking for books on the bar industry

I have long been fascinated with sociological, cultural, and even 
anthropological aspects of the hospitality industry. Making a long story 
short, are there any books on "the bartending life" and society that anyone 
can think of? My inspirations come from:

Anthony Bourdain's, _Kitchen Confidential_.
Barbara Ehrenreich's, _Nickel and Dimed_.
Alison Owen's, _Hey, Waitress! The USA from the Other Side of the Tray_.

or even the classics:

W. J. Rorabaugh's, _The Alcoholic Republic: An American Tradition_.
George Orwell's, _Down and Out in Paris and London._

Given that my doctoral dissertation will probably never be finished, perhaps I 
could also NOT write about the profession I have spent most of my life doing.
