Subject: Catering Companies

I just signed up for a catering company in the Los Angeles area.  I have very 
minimal experience as a bartender (only private parties).  However, I am very 
comfortable behind the bar, I know just about all the popular drinks, glasses, 
$$$ handling, etc.  Only problem is I don't have any "actual" experience on my 
resume.  The catering company told me that they would not be able to start me 
off as a bartender because I have no experience setting up/breaking down a bar 
(even though I know how to do that).  They want me to start as a barback or 
server to get the feel of the environment/events before allowing me to 
bartend.  Has anyone had any experience with catering companies?  If so, what 
can I expect?  Is it likely that I'll be behind the bar in a matter of weeks?
