Firstly you could respect your friends wishs not to drink.  However, if she 
doesn't like the taste of "alcohol" then maybe she just hasn't found an 
alcoholic drink she likes.  How about suggesting she tries things where you 
can taste the drink, rather than trying to cover it up and pretend there is no 
alcohol in it.  Try things like archers and lemonade (7up/sprite, not the flat 
yellow stuff) or malibu and coke.  They are sweet and have a definate flavour 
without tasting so much of "alcohol".

If your friend has not had alot of experience of drinking then she will not be 
used to the different stages of drunkness.  As she enjoys it more and feels 
safe or relaxed with where she is and who she's with, she may allow herself to 
become a bit more drunk.  But remember, the only reason to drink isn't to get 
drunk.  If it was we could all do a few shots of everclear and then stagger 
round until it wears off.  Enjoy the drink for what it is, not just the effect 
it has.
