--Just a couple finer details to the other follow-up message.  Everybody 
counts differently, and every different brand of pour spout pours differently. 
 Generally, a four count (lifting the bottle ON four) is approx. 1 oz.  You 
also have to realize that 1 "shot" could be either 1, 1 1/4, or 1 1/2 oz. 
depending on your local liquor laws.  Your bar should have a current copy of 
the laws, or they should get one.  All in all, you have to test your own 
pours.  It's takes some time to get it right every time... but eventually 
you'll be able to do it with your eyes closed.
