My bar doesn't have a barback, but here are some duties I would expect of you:
Know how to change a keg
Know how to change soda syrup
Stock ice
Stock beer
Stock everything else (napkins, matches, juice, etc.)
Clean if necessary
Check on restrooms.

I personally have no idea how to change soda syrup, and I'm way too small to 
change a keg by myself. Mostly all you need to know is where backstock is 
kept, and where it goes, which of course you can't know until you start. Also, 
rotate, rotate, rotate!
