Guavaberry Recipes - Cocktails & Cuisine

Guavaberry Colada. Put ice in blender, add 2oz Sint Maarten Guavaberry, 1oz 
Cream of Coconut, 3oz pineapple pieces or juice. Blend well. Garnish with 
pineapple, toasted coconut & fresh nutmeg.  

Island Queen. Pour 1/2oz chilled Sint Maarten Guavaberry into a freezing 
champagne flute. Fill with cold, dry, good quality French or Californian 
champagne. Garnish with a cherry or a flower. 

GB Bikini. In a tall glass with ice pour 2oz Sint Maarten Guavaberry. Fill up 
with 5oz Fresh Grapefruit Juice. Garnish with a slice of grapefruit or lime 
and fresh grated cinnamon. 

Dances with Wenches. Stir or shake with ice - 2oz Sint Maarten Guavaberry, 1oz 
lime juice or lemon juice and 5oz cranberry juice. Garnish in hi-ball glass 
with slice of lime & fresh mint leaves.  

Byron's Bongo. Shake 2oz Sint Maarten Guavaberry, 2oz pineapple juice, 1oz 
orange juice, 1/2oz lime juice & 1/2oz grenadine. Decorate tall glass with 
orange, pineapple, lime and grated nutmeg.  
  
Island Lover. In a frozen wine glass pour 1oz Sint Maarten Guavaberry. Fill up 
with very cold dry white wine. Some people like to add a dash of sugar and a 
few ice cubes.  

Sint Maarten Café. Made like an Irish coffee. In a preheated glass add 6oz hot 
coffee. Stir in 1 1/2 teaspoons of brown sugar, 2oz Sint Maarten Guavaberry. 
Float cold thick fresh cream on top. Garnish with grated nutmeg & cinnamon.  

Guavaberry Sour. In a cocktail shaker with ice pour 2oz Sint Maarten 
Guavaberry and 2oz lemon or lime juice. Shake well. Serve up or on the rocks. 
Garnish with a slice lime and a maraschino cherry.  
  
Guavaberry Daiquiri. Old favourite may be blended till frothy or shaken with 
ice. Use 2oz Sint Maarten Guavaberry, 2oz lime juice, 1 tea spoon sugar. 
Garnish with slice lime and maraschino cherry.  
  
The Smartini. In a cocktail shaker pour 1 1/2 oz vodka, 1/2oz Sint Maarten 
Guavaberry, 1oz cranberry juice. Strain into martini glass and garnish with a 
maraschino cherry. 

Guavaberry Sling. In a cocktail shaker pour 1oz Sint Maarten Guavaberry, 1oz 
dry gin, 1oz lemon juice, Shake well, pour into hi-ball glass. Decorate with 
lemon slice, cherry and grated cinnamon. 
  
Guavaberry Sunrise. Shake 1oz tequila, 1/2oz Sint Maarten Guavaberry, 4 oz 
orange juice. Pour into salt rimmed cocktail glass. Pour the other 1/2oz 
Guavaberry into the bottom of the glass.  

Guavaberry Cuisine 

Lobster Salad Picasso. Puree the flesh of 2 ripe mangoes, add 2oz olive oil, 
the juice of 1/2 lime, 2oz Sint Maarten Guavaberry. Arrange on the plate on a 
bed of radicchio or lettuce - 16oz sliced fresh Caribbean spiny lobster tail, 
sliced avocado, thin batons of cucumber & carrot. Pour on & paint the plate 
with the mango puree mixture. Serves 4. 
       
Antillean Chicken. Make marinade with 1/2 cup chicken consomme, 2 tbsp soy 
sauce, 2oz Sint Maarten Guavaberry, 1/2 cup orange juice, I teasp fennel seeds 
& hot pepper to taste. Pour over 4 chicken sections. Marinate in fridge for 
1-24 hours. Broil on hot BBQ. Baste constantly. (4) 
        
Minute Steak Onassis. Beat 4 steaks until thin. Overheat 1oz olive oil in a 
copper pan, sear steaks 1 minute each side. Remove to hot plate. Stir in 1 
teasp dry hot mustard, 1 tbsp thyme florets, 1 tbsp Worchester sauce, 4 tbsp 
chives, 1 teasp lemon juice. Flambé with warmed Sint Maarten Guavaberry, add 
2oz lite cream, pour over hot steaks. Serve. (4) 
        
Carib Island Tuna. Make a large kebab alternating one inch cubes of fresh 
tuna, whole peeled shrimps, onions, red & green peppers. Marinade the kebabs 
in a mixture of 2oz Sint Maarten Guavaberry, 1oz brown sugar, 1 tbsp vinegar, 
1 teasp thyme and hot sauce to taste. Cook on hot mesquite BBQ for 2 minutes, 
basting constantly.
