G'day from Sydney,Australia.
When practicing flair moves with bottles & water, firsty never use more than 
90ml in the bottle (3oz). This will mean that centrafugal force will be more 
likely to keep the liquid at the bottom of the bottle. Keep the throws fast, 
full revolutions - ending in either a pour or an upright position. Alot of 
bartender make the mistake of double movements (catching the bottle not in 
pouring position but not in upright either) this will jerk the bottle an get 
water/ liquor in the airhole.
Also, bear in mind that if the pourer stays dry it is less likely to let 
liquid out than with a wet one. I.e. once the pourer has let liquid out once 
it will tend to leak more.
