"Irish Whiskey" brings two things to an Irish Coffee (or any drink), it's
flavor, and it's "alcoholic texture".
The "flavor" of Irish Whiskey is mild and unassuming, quite different from its
Scottish cousin. In my mind, the alcoholic texture plays far more of a role in
an Irish Coffee then the whiskey flavor would.
I don't know of any artificial "Irish Whiskey" flavorings available. Although
you can find "Imitation Rum Extract" in the spice isles of many grocery stores.
I also did find at least one company that sells an imitation "Bourbon Whiskey"
extract (http://www.jogue.com/flavors_confec.htm). But that of course is going
to taste different from Irish Whiskey.
One way of making non-alcoholic "Irish Coffee" is to simply use an "Irish
Cream" flavored coffee syrup, you should be able to find these all over the
place. DaVinci Gourment (http://www.DaVinciGourmet.com) here in Seattle, as
well as Torani (http://www.torani.com) both have a version that they sell. It
of course is not going to be the same as an alcoholic Irish Coffee, but it
does taste pretty good!
The "alcoholic texture" however will of course be missing from any of these,
and I don't really know of any way to bring that in.
