If you want to move on, I say start applying now.  Either you'll find a job, 
or worst case scenario they'll say "come back when you have more experience."  
And then when you do return, you'll not only have more experience, but you 
will be demonstrating that you really do still want a job wherever it is you 
are applying.  Especially if you don't mind bussing for a while.  You can 
always start bussing somewhere to get in with them and work a couple shifts a 
week at the hotel to keep up with your mixing-related knowledge and experience.
