In the bars where I've worked the barbacks job involved basically doing all 
the jobs needed to keep a busy bar running smoothly e.g.

maintaining stocks in fridges
keeping speed rails full and juice containers topped up
bringing ice and crushing ice
keeping garnishes available
changing kegs
washing glasses
cleaning up
And 1 million other things that might need doing when the bar is busy

Its a great way to get a feel for bar work and get to know how the bar runs 
and will often lead to a job as a bartender
